Non-stick frying pan
Wooden spoon
Butter/margarine (2 table spoons)
Olive oil (2 table spoons)
4 large red potatoes (peeled, washed and chopped into cubes)
1 large red onion (peeled and chopped)
1 large red bell pepper/2 large scotch bonnet peppers
1 large green bell pepper
1 medium sized carrot (peeled, washed and chopped into cubes)
2 cloves garlic (pared and crashed)
1 teaspoon curry
1 teaspoon thyme
Seasoning cubes
Salt
Preparation period: 20 minutes
Cook time: 20 minutes

Pre-cook chopped carrots in clean water for about five minutes or until tender heat the non-stick frying pan over the medium heat
Melt the butter and add the olive oil
Add the onions and garlic until slightly translucent, about 2 minutes.
Add the carrots, chopped red and green peppers and cook for another 2 minutes, mixing with a wooden spoon.
Add the chopped potatoes and cook, mixing frequently for around 20 minutes until the potatoes are soft and lightly brown (add curry and thyme shortly after adding the potatoes).
Add seasoning and salt to taste.
Your potato home fry is ready to be served.
You can serve with beef, chicken or fish or any other kind of meat you desire
